Banana Chocolate Chip Muffins

Ingredients (To Make 18 Banana Chocolate Chip Muffins)
- 280g self-raising flour
- 120g rolled oats
- 150g chocolate chips
- 120g brown sugar
- 2 eggs
- 200g plain yoghurt
- 80ml vegetable oil (alternatively, use 80g apple sauce)
- 250g bananas, mashed (approx. 2 – 3 bananas)
Method
Preheat the oven to 200°C (fan-forced 180°C). Line a 18 holes of muffin pans with paper cases.
Sift the flour into a bowl. Add the oats, chocolate chips and brown sugar, and stir to combine.
Whisk the eggs, yoghurt and oil together. Add the banana and stir to combine. Pour the mixture into the dry ingredients and mix together using a wooden spoon until just combined. Do not over-mix.
Spoon the mixture into paper cases. Bake for 15-20 minutes or until golden and cooked through. Allow to cool and enjoy!
Wow! Thanks for the delightful recipe. Anything with banana’s is a huge hit with my family. 🙂 Was wondering if I substituted vegetable oil with coconut oil would the taste and texture change much?
Coconut oil works fine! 🙂
Yum! These were great! Very moist and tasty. I think I would add some cinnamon next time. I substituted the vegetable oil for coconut oil, which seemed to work well. 🙂
