Whipped Chocolate Ganache Cupcakes

Ingredients
To make 15 of these you will need…
- 1 cup (150g) self-raising flour
- 1/2 cup (75g) plain flour
- 1/3 cup (35g) cocoa powder
- 3/4 (165g) caster (fine) sugar
- 185g butter, softened
- 3 eggs
- 1/2 (125ml) milk
To make one batch of whipped chocolate ganache you will need…
- 1 and 1/2 cups (375ml) cream
- 600g milk chocolate, roughly chopped
Method
Preheat oven to 180°C. Line 15 holes of muffin pans with paper cases.
Sift the flours, cocoa and sugar into a medium mixing bowl. Add the butter, eggs and milk and beat with an electric mixer on low speed until all ingredients are combined. Increase to medium speed and beat until mixture is smooth and has turned paler in colour.
Drop 1/4 cup of mixture into cases. Bake for 20 minutes. Cool on a wire rack.
To make the whipped chocolate ganache, bring the cream to the boil in a medium saucepan, remove from heat.
When the bubbles subside, add the chocolate and stir until smooth. Set aside to cool. Once cooled, beat with electric beaters until thick and fluffy.
Spread or pipe swirls onto each cupcake generously with the ganache and decorate as you desire…
For the Rainbow Cupcakes use Smarties or M&Ms with 100s and 1000s, or try just Chocolate Sprinkles. For the Peanut Cupcakes we stirred 1/2 cup of Peanut Butter through the whipped ganache and sprinkled with chopped peanuts. How would you decorate yours?
